Mimmo La Innusa, Sicily, Italy— Co-owner and
Chef Mimmo has been with Fat Clemenza’s since its inception. He grew up in
Palermo and has been a pizza master for over seven years. He began his
education with a friend, Mauritzio, in Sicily, who taught him his art. From
there he travelled to Germany and England, honing his craft before he
finally came to America. He enjoys being on the floor. "I like to talk
with the people and I like to make the pizza in the kitchen. My passion
started in Sicily—working in a restaurant, making pasta—I worked a lot. I
learned more and more every day. (Fat Clemenza’s) is real Italian. All of
our recipes come straight from Italy.” His recommendation? The pizza that
proudly bears his name: The Mimmo with tomato, mozzarella, mushrooms and
prosciutto.
